Cold raised durum rolls

I've mentioned it before on this site, fresh bread is the bomb! This is another take on slow/cold risen bread well suited for breakfast. These are very white, because sometimes I have this craving for a very basic type og bread. Found the recipe here (it's in danish) twisted a tiny bit.

You will need


300g durum flour
300g all purpose flour
5dl water
2 tsp salt
2 tsp sugar
15g fresh yeast

Dissolve the yeast in the water and then add the rest of the ingredients. The dough should be quite wet as the flour will absorb water during the raising. Place the dough in a well greased bowl, cover it with cling wrap or aluminum foil and put it in the refrigerator for the night. When you get up the next morning use two spoons to place twelve equal sized pieces of dough on a baking tray and place in a COLD oven, set the temperature at 230C/220 if you have a convection oven (probably the highest your oven can go) and bake for approximately half an hour.

Rolls should be golden and have a hollow sound when you tap the bottom.

Very good with butter and nutella ;-)
