Easy bread rolls

I love fresh baked bread especially for breakfast. The problem with this is that also like my bed and how comfortable it is, especially in the morning. These bread rolls are my solution to this seemingly unsolvable conflict!

You prepare the dough the day before you need need it and it is very simple. You will need the following:


1 l water (4.25 cups)
10g fresh yeast (1/4oz)
1 tbsp maple syrup (a big one)
1 tbsp salt
500g wheat flour (1.1lb) (use your favorite kind)
300g whole wheat flour (0.66lb)
200g oat flakes (0.44lb)
100g pumpkin seeds (0.22lb)

Making the dough

  • Dissolve the yeast in the water
  • Add oat flakes and maple syrup and mix it well
  • Add pumpkin seeds and salt
  • Mix your wheat and whole wheat flour and add it in small portions as you continuously mix it in real good.

The dough should be wet and a little runny. Just so runny that it very slowly slides off of a spoon. Cover the bowl with cellophane wrap and place it in the refrigerator for at least 12 hours, it can sit there for several days so you can actually prepare the dough a couple of days before you need it.

Now if you want you rolls for breakfast like me, get up from bed although you don't want to and go turn on your oven as high as it can and go back to bed and snooze for 15 minutes (leave your oven trays in the oven). When the oven is really really hot it is time to prepare the rolls.
Take a sheet of baking paper and use 2 table spoons to scoop up the dough from the bowl and place it on the paper. I am usually able to fit 12 rolls on a sheet. now take an oven tray from the oven and slide the baking paper on to it and put it in the oven for about 15 minutes. Repeat with the second half of the dough.

If you are fast you can manage to take a shower while the rolls are baking and dress while they are cooling. So when you are ready the rolls are ready to be eaten.

Serve while they are still warm with butter.
