This is one of the simplest yet most delicious starters you can make. The key- and I mean THE key- is that the ingredients need to be absolutely gorgeous. You need tomatoes that are happy, that have seen nothing other than soil and sun- no lorries, refrigerators or airplanes- that smell of tomato- you know what I mean. You will also need really good quality buffalo mozzarella.
Start by making the marinade by mixing together all the ingredients in a pestle and mortar. Now break the mozzarella roughly (& rustically) with your hands, and rub the marinade. Set it aside for 15-30 minutes.
To serve, cut the tomatoes into wedges and serve with the mozzarella. Drizzle with extra olive oil and serve.
