Spaghetti with Meatballs

We probably all remember the famous scene from the Lady and the Tramp where they get served spaghetti with meatballs on a red-checked tablecloth with candles, while Tony plays Bella Notte on his accordion. If their spaghetti dish tasted as good as this, we can truly say that it must have been a delightful meal. This is definitely the wonder child of comfort food!

Ingredients for the meatballs

500 g minced meat (we like to do half beef half pork)
2 slices white bread (without crust)
approx. 3/4 cup. milk
1 egg
75 g grated Parmesan cheese
2 tbsp. chopped flat-leaf parsley
2 cloves of crushed garlic
Grated zest of ½ lemon
salt and pepper

For the sauce you need:

3 cloves garlic, minced
3 cans peeled tomatoes
1 Tbsp. balsamic vinegar
1 ½ tbsp. sugar
1 tsp. chopped fresh basil
grated lemonzest from ½ lemon
salt and pepper

Break the white bread into small pieces and put it into a bowl. Pour milk over and the bread becomes soggy, the add the parsley and finely chopped garlic. Finely grate the parmesan cheese finely and add it to the bread mixture. Add the remaining ingredients and stir the mix together. Stir for approx. 5 minutes. Put the meat mixture in the fridge for half an hour, so it settles and the flavours mix together nicely. Now form the mixture into meatballs the size of walnuts and fry them in olive oil for approx. 8-10 minutes. Shake the frying pan continuously as you are frying so as to keep the meatballs round.

Now for the sauce. Chop the garlic finely and fry it in olive oil in a pan. Add the peeled tomatoes and the other ingredients. Once the sauce is simmering, add the meatballs and let the sauce simmer for 25-30 minutes with a lid on. Stir the sauce gently every 5 minutes or so to keep the meatballs from sticking to the bottom.

Cook the spaghetti al dente in a large saucepan with salted water.

Serve with a little grated Parmesan cheese and some fresh basil. And I promise you will want to lick the plate when you’re done!

So this was a hit. Everybody loved it and we made sure to make enough to cure any hangover today. Highly recommend this recipe.
