Avocado fries with Spicy Lime Aïoli

I LOVE avocado so when I read about preparing my fave fruit like french fries, I knew I had to try this! It is always fun to find new ways to prepare something you love, right?!

Ingredients for avocado fries

2 avocados, sliced into 1/4 inch slices
2 eggs
1.5 cup milk
1 tbsp worcestershire sauce
3 tsp of sweet paprika
1 tsp cayenne pepper
1/4 tsp ground black pepper
2 cups all purpose flour
corn oil (for frying)

But we also need something to dip these bad boys in:

Ingredients for Spicy Lime Aïoli

3/4 cup mayonnaise
2 Tbsp minced garlic
Juice from 1 juicy lime
1/4 tsp cayenne pepper
1/2 tsp sweet paprika

Start out by mixing all the ingredients for the aïoli. Just throw everything in a bowl and stir well until everything is properly mixed and then leave the bowl in the refrigerator, until you are ready to eat.

At some point during preparing the avocado fries, you should take a large skillet and add oil so that there is about an 1/2 inch in the skillet and the heat is on medium to high. The proper heat is ready once bubbles appear, if you dip a toothpick in the oil. .

Mix eggs, milk, worcestershire sauce and a couple of tablespoons of flour in a bowl, married to a smooth consistency. Take another bowl and mix the remaining dry ingredients (flour, cayenne, paprika and ground black pepper).

Next, remove the pit and the skin from the avocados and slice them in 1/4 inch slices. Find a large plate (something large enough to contain all your avocado slices) and you are ready to use your station:

  1. wet bowl
  2. dry bowl
  3. large plate

Then you take an avocado slice and perform 1 - 2 - 1 - 2 - 3 (wet - dry - wet - dry - plate).

When you have battered up all the slices, your oil should be hot and ready! Add slices to the oil but make sure you don't crowd the skillet! The avocados can't touch each other!
Fry until they have a nice golden color all over (you might have to turn them) and then transfer them to another large plate with some paper towels to soak the excess oil. When all the slices are done, you are also done!

Don't forget the Aïoli in the refrigerator when you serve the avocado fries!! ;-)
