Sookju Namul (Korean bean sprout side dish)

Sookju Namul (Korean bean sprout side dish)

I really need to go to Korea at some point the food I've tasted so far is just fantastic and I also enjoy making it myself! This little dish is very nice as a part of a sort of korean tapa starter or as a side order to different main dishes

Go to your favorite asian shop and have a look at all the interesting stuff they have! Oh and don't forget to by what you need from the list below:

400g bean sprouts (soy or mung beans)
1/2 scallion
1-2 clove of garlic
1 tsp roasted sesame seeds
1.5 tbsp sesame oil

Take a large pot and add a lot of water (like 1,5l) add a pinch of salt and bring to a boil. While the water is heating rinse the sprouts under cold water and discard any that does not look fresh and feel crunchy. Add the sprouts to the water when boiling and boil for 3 minutes. While the sprouts are boiling chop the scallion in fine slices, mince the garlic and mix the two with sesame oil, toasted sesame seeds (if you can't find pre toasted just give them 6 minutes at low heat in a skillet) and a big pinch of salt. Drain the water from the sprouts and shower them in very cold water (running or an iced bath) so you stop the preparation of the sprouts and leave them with a little bite ;-)

Mix sprouts and the seasoning mix and you are done! Enjoy!
