Super veggie burgers

These veggie burgers are so good and nourishing that you will wonder why they are not on the menu of all restaurants.


2,5 dl. chopped onion

2 cloves of garlic - pressed

2 eggs

2,5 dl. breadcrumbs

2,5 dl. oat flakes

2,5 dl. grated carrots

2,5 dl. canned beans – black or whatever – crushed

1 dl. chopped parsley

1,5 dl. chopped almonds (with skin)

1 dl. sunflower seeds

4 table spoons of olive oil

4 table spoons of soy sauce

1 table spoon of ground cumin

1 table spoon of dried oregano

1 tea spoon of chilli powder

1/2 dl. olive oil for frying

Salt and pepper

Chop, cut and prepare everything. Mix and work through until you have an even mixture. Add an extra egg to adjust consistency if needed. Shape into burgers – this amount will give around 12 big burgers. Heat olive oil in the frying pan and fry for 5 min. on each side until golden. Serve with a salad, caramelized onions, potatoes and gravy. Or in a bun with lettuce, slices of tomatoes, finely sliced onion and a bit of mayo. Uhm...
