Sigeumchi Namul (Korean spinach side order)

Sigeumchi Namul (Korean spinach side order)

This little side dish is very similar to the Sookju Namul and is also a nice as a part of a sort of korean tapa starter or as a side order to different main dishes

Everything here will be very similar to the recipe mentioned above ;-) Go to your favorite asian shop and have a look at all the interesting stuff they have! Oh and don't forget to by what you need from the list below:

300g spinach (fresh)
1-2 clove of garlic
1 tsp roasted sesame seeds
1.5 tbsp sesame oil

Take a large pot and add a lot of water (like 1,5l) add a pinch of salt and bring to a boil. While the water is heating rinse and trim the spinach under cold water, that is if you haven't bought the prepared stuff that'll save you a bit of work. Add the spinach to the water when boiling and boil for 30 seconds. Then immediately transfer to a bath of ice water. Leave it there for a couple of minutes. While the spinach is cooling off chop the scallion in fine slices, mince the garlic and mix the two with sesame oil, toasted sesame seeds (if you can't find pre toasted just give them 6 minutes at low heat in a skillet) and a big pinch of salt. Take the spinach out of the water and squeeze it for excess water and then cut it in 3cm long pieces.

Mix spinach and the seasoning mix and you are done! Enjoy!
