This recipe is inspired by my mother who served what she called the world’s best home made muesli. This is an improved version so I guess I should call it the best muesli in the universe. Or maybe I should just be honest and say that it is a good muesli, and I really enjoy eating a muesli where I know what all the ingredients are, and I know that they are good ingredients because I bought them myself. That said there are probably other great ways of making muesli, so if you also have the recipe for the world’s best muesli and it is different from this one, well, please share it :-)
Turn on the oven at 125C. Line a baking tray with baking paper and add all the ingredients except coconut, oil and honey. Mix the grains with your hands. Gently heat the honey and oil over low heat and pour over the muesli. Mix everything well with a pair of spoons. Put the baking tray in the oven and toast everything for a total of 30 minutes. When 10 minutes remain you add the coconut. Remove the tray from the oven and stir the muesli every 5-7 minutes.
Let it cool and store in an airtight container. Breakfast time!!!
