Fajita Salad

Fajita Salad

So I am currently living with friends and we were looking for a meal without grain/flour. I remembered seeing a Fajita Salad that looked really nice and thought that would be a suitable dinner for this occasion. This is my attempt at recreating that visual memory.

Ingredients for fajita

3 Tbsp. olive oil
3 Tbsp. lime juice
1 tsp brown sugar
1 tsp chili flakes
1/2 tsp garlic powder
1 tsp salt
2 Tbsp. vegetable oil
3-4 boneless, skinless chicken breast
2 small red bell peppers, thinly sliced
2 small yellow bell peppers, thinly sliced
1 yellow onion, halved and sliced
2 tsp chili powder
2 tsp cumin
2 cloves of garlic minced/crushed
1 pinch of salt
1/2 head red leaf lettuce, chopped/torn
1/2 head green leaf lettuce, chopped/torn
2 avocados, sliced

Start out by preparing the dressing; take a small bowl and combine the dressing ingredients (olive oil, lime juice, brown sugar, chili flakes, garlic powder and salt) stir until everything is mixed well and set aside.

Then prepare the vegetables (except the avocados). When everything is sliced and diced heat the vegetable oil in a pan on medium-high heat. Actually you will probably need two pans if you wanna cook everything at the same time. When warm add the bell peppers, onions and chicken breasts to the pan(s) and add chilli powder, cumin, garlic and salt and toss everything around so all the ingredients gets mixed really well. Keep stirring the vegetables but let the chicken be for five minutes, then flip the breast and continue for five more minutes. Turn off the heat and cut the avocados in good bite size chunks. Then you toss the lettuce, peppers, onion and avocado. Give the dressing another good stir and add 2/3 of the dressing to the salad (serve the rest of the dressing as a side so that those who wants can get some extra kick/grease). Slice the chicken into strips and place them on top of the salad or serve them on a platter on the side.

Serve the salad as is or with a bite of bread (for those that want that).
