So I have this unnamed friend who has a guilty pleasure! When those are food related you can be sure that I will help you indulge in the your dirty actions fulfilling your deepest desires! When I at the same time am intrigued I am all the more for the adventure. My friend admitted that she would only eat pork if it were in the form of Biscuits and Gravy. I had no clue what it was but as soon as I had looked it up I was READY to try it! HEre is my attempt.
Now to prepare yourself you will need the following:
Ingredients for Biscuits
The biscuits are really easy, but we will get to that.....
Ingredients for Sausage Gravy
Ok lets gets things rolling by setting the oven at 200C. Mix flour, baking powder and salt in a bowl. Next crumble the butter into the flour mix. This is easiest if the butter is really cold. Work fast and make the mix so there are no big lumps. Finally stir in the buttermilk until the dough stops crumbling.8 Use two tablespoons to scoop and place portions of the dough on a baking sheet (you should be able to make around 12 biscuits from the dough). Throw it in the oven and bake until golden (around 15 minutes, but check at 10!)
While the biscuits are baking you make the gravy. Take your sausages and crumble them into tiny pieces as tiny as you like. On a skillet at medium-high heat brown the sausage pieces until you see no more pink meat. Lower the heat to medium-low and drizzle the sausage pieces with half (20g) the flour. Stir so that the sausage pieces absorbs the flour, add more flour and stir till absorbed. Repeat until you have no more flour or the mix starts looking too dry. (If you are using low fat sausages you can add a little butter if the sausages absorb to little flour (less than two thirds of the amount listed above.) Then add the milk and keep stirring until the gravy starts thickening. Add crushed pepper and old bay and check if you are satisfied with the thickness of the sauce, if it is to thick add a little more milk and stir, repeat until your are satisfied and finish by adjusting the taste with pepper and old bay.
Now serve it while it is hot!!
When it comes to how you serve biscuits and gravy there are apparently different ways to do that: Some serve the gravy in a bowl with the biscuits on the side (as shown on the picture above). Others cut the biscuit in halves and pour gravy over. I crumbled my biscuits and splashed them with gravy.
I suspect all three variants are great!!
