Rhubarb Margarita

Oh yes! I know you’re salivating. It is absolutely wonderful in the warm summer nights.


500gr rhubarb
2 Oranges
4tbsp sugar
Cointreau or Triple Sec

First, start by making the rhubarb syrup. Wash and cut the rhubarb into 2cm pieces and put it in a pan with the juice from the 2 oranges and 4tbsp sugar. Gently stew the rhubarb for around 10 minutes or until quite tender. Take it off the heat, use a sieve to strain off the syrup into a jar and leave it to cool. You can store the mix in the fridge for up to a month.

Now for the Margarita. Mix 3 parts rhubarb syrup, 2 parts tequila and 1 part Cointreau or Triple Sec. Shake with crushed ice and pour into a Margarita glass. You can rim the glass with salt if you like. Enjoy!
