Chocolate, chili and ginger cookies

These cookies are very easy to make and taste great. The chili gives them a bit of extra bite which is both surprising and very nice.


100 gr. wheat flour
1/2 tsp. baking powder
1/2 tsp. chili powder
50 gr. light muscovado sugar
85 gr. butter, soft
1/2 tsp. vanilla essense
1 tbsp. milk
100 gr. dark chocolate (bitter is preferable)
3 pieces of pickled ginger, chopped finely

Turn on the oven at fan 180C/350F. In a big bowl add flour, baking powder, chili powder and sugar. Combine and then add butter, vanilla and milk. Mix everything thoroughly with your hands or a wooden spoon. Break the chocolate in small pieces and add it together with the finely chopped ginger and mix until the chocolate and ginger is evenly spread throughout the dough. Divide the dough into 8 equal size parts and roll each piece to form a ball. Flatten each ball and put on a piece of greaseproof paper. Bake the cookies for 12 to 15 minutes until golden. Let the cookies cool before eating. Enjoy!
