Fruity Buns

These buns are simply delicious and super tasty!!! Just up my alley…


1 dl. orange juice – freshly pressed,
2 dl. milk,
25 gr. fresh yeast,
500 gr. strong wheat flour,
75 gr. sugar,
1 teaspoon salt,
50 gr. soft butter,
1 large egg,
75 gr. small raisins,
50 gr. finely chopped dried apricots,
2 kiwis – peeled and finely diced,
Zest of one organic orange,
1 teaspoon cinnamon,
Oil for greasing

Mix the orange juice and the milk in a saucepan and heat until lukewarm. Pour into a large bowl. Make sure that the liquid is not too hot and then dissolve the yeast and stir. Add the soft butter, the egg, sugar and salt. Stir well. Now add the fruit, cinnamon, orange peel and finally start adding the flour. Mix well and knead on the table until you have a not too firm dough. More flour may be needed. Pour a small amount of oil into your bowl and turn the dough around in it, so that the oil covers all sides. Leave to rise for 1 hour.

Now, pour the dough onto the table and make a roll. Cut the roll up into 12 pieces and shape them into buns in your hands. Place on your baking tray on baking paper and leave to rise for another 45 min. Brush the buns with milk before they go into the oven. They should bake for app. 25 min in a 200 degree hot oven (170 if fan assisted). Enjoy with cold butter!
