Stoemp (Mash Potatoes... Belgian Style!)

I dont care if I sound a bit obsessed by posting this. The foodie madness that might follow is worth it.

I made this classic Belgian dish at a friends Hen party and it went down a storm.

Introducing STOEMP:


5 large potatoes, peeled (again!)
4 tablespoons butter
Cream (to taste!)
1 small onion
2 garlic cloves
4 medium leeks, finely sliced
1/2 cup vegetable stock
salt and pepper
little freshly ground nutmeg
  1. Cook the potatoes until they slip off a knife. Nice and tender.

  2. While the potatoes are cooking, Chop up all the veg. and lightly fry them in the butter.

  3. Add the cream and stock. Simmer for approximately 10 minutes.

  4. Add this vegetable goodness to the mashed potatoes.

Eet smakelijk, as they would say in Belgium.

I promise next time to add a recipe that doesn't involve potatoes!

Wait, aren't there carrots in that too? If not, what is orange? No matter, it looks amazing and I can't wait to try it! It looks looks it adds so much flavor to a typical mashed potato dish!

Great recipe, but where are the carrots? Stoemp was the very first lunch I had in Ghent, on a rainy day at the cafe in the City Museum. It was delicious, and so is this.
