I dont care if I sound a bit obsessed by posting this. The foodie madness that might follow is worth it.
I made this classic Belgian dish at a friends Hen party and it went down a storm.
Cook the potatoes until they slip off a knife. Nice and tender.
While the potatoes are cooking, Chop up all the veg. and lightly fry them in the butter.
Add the cream and stock. Simmer for approximately 10 minutes.
Add this vegetable goodness to the mashed potatoes.
Eet smakelijk, as they would say in Belgium.
I promise next time to add a recipe that doesn't involve potatoes!
