Storing vegetables and fruits


Garlic too - should be stored in a dry and dark place, such as a drawer or a jar with holes. Never in a plastic bag and under no circumstances in the humidity of a refrigerator.


Should be stored in a dry, dark and cool place, best between 5-10C/40-50F. Exposure to light makes potatoes develop green skin which. The green color comes from solanine, a poison especially dangerous for children.

Leeks, carrots, parsnips, parsley roots and other roots

Should be stored in a cool environment in a plastic bag to prevent the vegetables from drying out. Preferably in the refrigerator, or outside in the shade (if you live somewhere where it's not hot, obviously)

Lettuce and other leaf vegetables

Should be stored in a plastic bag in the refrigerator. The best you can do is to clean the leaves completely in water. Let them dry and then store in a plastic bag in the refrigerator.

Fresh herbs

Should be stored in a plastic bag in the refrigerator. Too much moisture will spoil most fresh herbs quickly so if you clean your herbs before storing them, make sure to leave them to dry for a while before storing in the refrigerator.


Especially, unripe avocados should NEVER be stored in the refrigerator as the ripening stops and they develop dark spots.

Bell peppers

Should be stored in a bowl on the kitchen table. Tomatoes and bananas can be stored together as they help one another to become ripe. If you store tomatoes in the fridge the ripening will stop and they will start losing flavor.


Never store bananas in the refrigerator as it will turn them black. Unripe bananas can be stored with ripe bananas or tomatoes to make them ripen faster. Bananas and tomatoes excrete ethylene which acts as a ripening agent.

Citrus fruits

Should only be kept in a bowl on the kitchen table for a few days. The best place to store citrus fruits is in the refrigerator where they will be good for several days.


Apples have a short life at room temperature so they should be kept cool in the refrigerator or in the garage in a cardboard box with some newspapers.

Whole melons can be stored at room temperature for a few days, but as soon as the melon has been cut, it should be stored in the refrigerator.
